Something for the weekend





Butternut and blue cheese muffins to be exact. Completely inspired by Lorraine Pascal and her recipe for pumpkin and rosemary muffins.

Choose butternut squash instead, 240g turned out to be a medium squash roasted with the skin, minus 4 pieces fed to The Hound.

Roasted with chilli, and bay and sage.

The mixture is a curious blend, but makes for a very light and fluffy muffin. I tasted the batter, and winced at the sourness, so added a left over piece of Cote Hill Blue for sweetness. Chopped into fine pieces.

Then i realised I had forgotten to put in the honey.

Either way.

I folded greaseproof to make deli style fanciness.

Motto of this recipe, if god gave you lots of workspace. Use it. Use it all.

It is pancake day / Shrove Tuesday next week. Suggestions for pancake toppings now being taken.

They are indeed very yummy, having devoured one with greedy elacrity! The addition of the blue cheese is genius, just zings on your palate. As for fave pancake filling mine (and it has to be savoury) is a tin of sardines in tomato sauce mashed with added worcester sauce topped with grated cheddar! Baked for 5 mins in the oven for the cheese to go all melty, its yummy! xxx

Primchick - I was dreading somebody asking that, I can't fathom out how i did them. I started with a square of greaseproof folded in a triangle and went from there. I can't find a tutorial online anywhere. Failing that Miss Pascal just used very deep muffin tins and pushed the paper in.

Jane - Definitely much emphasis on the fan.

Honey. The only topping for anything. Honey. Of course honey to me is what chocolate is to millions of women so I could be slightly biased. Just honey for me on Tuesday (or any day, for that matter).

Chilli con carne for main savoury and then lemon and sugar...is what I grew up being served from French father. Now it is all about the sweet things for my brood,ice cream and sauces,jam, caramelized apples,char grilled oranges and honey and still my favorite lemon sugar combo. Your goddaughter won your bulb in jar and carried it home delighted and amazed...you are such a star xxx

Hoorah for papery fanciness Miss P...

If folding isn't your thing though, the same effect can be achieved by using two small stacking glasses (roughly the same size as your muffin tin helps). Cut your square of paper, pop it over the top of one glass then stack the other glass on top of it, thus folding the paper in all the right places.

Pancakes shall be topped with sugar and lemon for us... Perhaps with sliced banana and Nutella if I'm lucky :)
